Cilantro + Mango Coconut Sherbet

There isn't a frozen treat that I don't like come summer. I mean, let's be honest, how else do you survive summer in the city?! And while I'm usually the girl sticking to a few select flavors, I've decided to branch out a little this year. Don't worry, it's nothing totally bananas, like egg salad ice cream or something totes crazy like that (Side note- there is a buttered lobster ice cream, which, as much as I love lobster, is just not ok!). Nope, I'm branching out by adding in some new herbs and seasonings. First up, this cilantro and mango coconut sherbet. Basically if a tropical smoothie walked into an ice cream shop this would be the result. It's seriously creamy and flavorful and all kinds of delicious. It was so good, I legit didn't think I would be able to stop eating it. I pictured Mr. RC coming home to find me in a heap on the floor surrounded by spoons and ice cream drips and coconut flakes and broken dreams and tears. It wasn't a pretty vision so I somehow managed to pry the spoon from my hand and regain my self-control. Luckily, self-control or not, this sherbet is gluten-free, dairy-free and vegan, so, ya know, eating the whole recipe probably isn't the worst thing in the world.
