I'll never forget the moment I was introduced to the magic that is frosted animal crackers. Actually, I lied. I totally don't remember the moment at all, mostly because I was stuffing my face with said animal crackers, but I do remember thinking something along the lines of "This is crack! And where has it been all my life?!"

I hadn't had frosted animal crackers in years, mostly because I knew that if I bought them, I would eat them....all of them. Not that I'm an expert or anything, but I feel like that move, in the middle of summer, probably isn't a great one. But I could only avoid the crackers for so long, and incorporating them into a summer dessert was too tempting to resist for too long. So I layered them up with some whipped cream, added on a big ol' pile of white chocolate curls and a whole lot more sprinkles (because DUH!) and had myself a little ol' frosted animal cracker ice box cake. Not only are ice box cakes the easiest dessert in the history of desserts (like literally a 2-year-old could make it in its sleep), they're also no-bake, no cooking and totally customizable. In other words, they're perfect for summer. This animal cracker one is fun and colorful and would be as perfect for a birthday party as it would for a BBQ, picnic or even a fun lunch with friends.
