Frozen Aperol Spritz

Is it just me or does it feel like everyone has been in Europe this summer?

And I do mean everyone. It seems like no matter where I look, be it social media, advertisements or commercials, truly everyone (and their mother and their dog) is summering in Europe, more specifically Italy. Now I am not one for FOMO, but seeing all of these images and photos of people living the good-life has me missing Italy like a plate of spaghetti would be missing it’s meatballs. But since we are not jetting to Italy anytime soon, I had to think quick (Read: put Mr. RC’s Bar Cart to work) and figure out a way to bring a little of that Italian summer to us here in LA. Et viola! A Frozen Aperol Spritz! This drink definitely turned any FOMO we had and kicked it to curb faster than Tony Soprano. I mean, think of it like this- it’s essentially a slurpee…with booze. Aka an adult slurpee aka a dream summer cocktail. It’s easy to make (and even easier to drink) and perfect for anyone that wants to bring themselves a little refreshment and taste of an Italian summer wherever they may be. As they Italians say “Saluti!”

yields 2 cocktails


INGREDIENTS

  • 3 ounces rosé or white wine

  • 1.5 ounces Aperol

  • 2 scoops of orange sorbet (lemon or any other citrus will works, as well)

  • 6 ice cubes

  • Champagne or prosecco to top


DIRECTIONS

In a blender, add ice cubes, sorbet, wine and Aperol and blend until smooth with no ice chunks. Pour into a coupe or a wine glass and top with a splash of champagne or prosecco and serve.
