Reubens are probably one of my all-time favorite sandwiches. Unfortunately they’re also one of the worst for you. So the Mr. and I came up with these healthy-ish alternatives.
You will want to make these if….
A) You’re not ready for St.Patty’s day to be over
B) You accidentally bought 5 pounds of meat…for 2 people (I may or may not have done this)
C) Reubens are your favorite sandwich, but you don’t like all the fat and calories
D) All of the above
Reuben Wonton Bites
1/2 a dill pickle spear,chopped
2 tbsp. Sauerkraut
2 tbsp. Corned beef,chopped
1 slice of swiss cheese
2 wonton wrappers
Canola oil spray
For the dressing-
1/3 c. greek yogurt
3 tbsp. ketchup
1 tbsp. apple cider vinegar
pinch of sugar
Grease a muffin pan with the canola spray. Line each cup with two wonton wrapper, slightly over lapping them. Then layer in the sauerkraut, corned beef and top with the cheese. Bake at 375 degrees for about 10 minutes, or until the cheese has melted and the edges of the wrappers are browned.
While the bites bake, mix all the dressing ingredients together until smooth.
To serve, top each bite with a little dressing and a couple of pickle pieces.
