In true Monday form, this post is going up uber late. But the good news?! This post will put a drink in your hand in 5 minutes flat. Those in favor of always starting Monday’s this way, raise your hand (and yes, both my hands are up!).
At first glance these lime currant margaritas may look like your typical margarita-with-fruit- added-mash-up, but the currants (a special treat I picked at my Grandmother’s house) add a very unique sweet, and slightly sour, taste and nicely round out the over-all flavor, as well as that pretty pink color, of this cocktail. It should also be noted that currants are a fruit (duh!) meaning this would totally qualify as health food and an acceptable replacement for a morning fruit smoothie (double duh!), something I will most definitely drink to!
Lime Currant Margaritas
For one margarita
2 ounces Tequila
1 ounce Triple Sec
The juice of 2 Limes (plus extra for rimming the glasses)
2 tablespoons of fresh currants
Sugar (for rimming the glasses)
Sugar the rim of a margarita glass using lime juice and sugar.
