It’s that time of year. You know, the time when every weekend consists of a BBQ and every hot evening (so basically every night) it’s necessary to cool off with ice cream. Except, there’s one teeny tiny problem. The teeny tiny bikini. Yup, it’s also bathing suit season. I mean, what person ever decided that burgers, ice cream and bikinis would be a good thing to have all at the same time? Because they were seriously mistaken. None the less, it is swimsuit season and while I can’t say no to a good burger or an ice cream cone, I also make a conscious effort to eat lighter food whenever possible. This citrus sesame yogurt delight is just that, a delight. It’s light and refreshing, it’s totally healthy and it’s perfect for breakfast, snacks, desserts, eating alone or dolloped onto fruit. Mix it in with frozen fruit and it even takes on a slight frozen yogurt consistency. I like to mix up a big batch of this 5-ingredient concoction and store it right in the fridge to have on hand anytime a craving hits, which, let’s face it, with the heat waves we get, it is basically every day.
- 1 cup plain yogurt (Greek or regular)
- 2-4 tablespoons honey (depending on preferences)
- Zest of 1 lemon & 1 lime (can also do orange zest)
- 1 large pinch of salt
- Toasted sesame seeds
- Stir together all ingredients (except for the sesame seeds) until well combined. Serve immediately, topped with sesame seeds, or store in the fridge, in an airtight container, for up to a week.
- Can be served over fresh or frozen fruit. Feel free to also add chopped nuts or granola on top. I've also recently been sprinkling chia seeds on top, too.
- If you use regular yogurt, this will have more of a sauce-like consistency, which is perfect in place of whipped cream or to drizzle on things such as angel food cake, shortbread, crepes, pancakes, waffles, etc
