25 No-Cook Summer Recipes

I don't know about where you live, but here in New York City, it feels like Mexico's weather snuck into my suitcase and came back with me. It's freakin' hot, people! Of course, in Mexico, I was running around in a swimsuit, cooling off with margaritas in my hands and my feet in the sand. In New York, well, there's no sand to be found, swimsuits don't exactly qualify as appropriate attire, and the margaritas, well, let's just say, don't judge a water bottle by its cover! And don't even get me started on cooking! Just the thought of turning on the stove makes me feel like I'm going to pass out from heat exhaustion. Since I know I'm not the only one living in a fiery hell-like atmosphere, I've rounded up a few recipes that don't require use of your stove or oven (or suggestions on how to change a recipe so that it requires no cooking). You're welcome! 

Wedge Salad (use leftover bacon, or skip it entirely) || Microwavable 1-Minute Coffee Cake in a Mug || Blackberry Mint Gimlet

Curried Carrot Salad || Coffee Toffee Crunch Sundaes || Grilled Vegetable Salad (keep the heat outside by utilizing the grill for cooking)

Summertime Italian Pasta Salad (if you have leftover pasta, use that; if not, use a crusty bread broken into small pieces) || Sorbet-Ritas || 5-Ingredient Green Bean Salad

Cobb Salad (utilize leftover turkey burgers or grilled chicken, cut into strips, and leftover hard boiled eggs) || An Italian in Mexico Cocktail || Feta Greek yogurt Dip

Boccone Dolce (to avoid making the meringue, use store-bought angel food cake instead) || Citrus Yogurt Delight || Greek Salad (skip making the croutons and use a day-old bread instead)
